Homemade buns

Ingredients (8 pcs):
• 500 g fine flour
• 20 g sugar
• 10 g salt
• 20 g fresh yeast (or 7 g dried)
• 1 egg
• 250 ml lukewarm milk
• 40 g butter (melted)
• 1 tbsp oil for greasing the bowl
• (Optional topping) egg + sesame seeds

Preparation:Mix the yeast and sugar into the lukewarm milk, rest for 10 minutes. Mix the flour and salt together, add the egg, the activated yeast mixture, and the melted butter. Knead into a soft, shiny dough (10–12 minutes by hand, 6–7 minutes by machine). Cover and let rise for 1 hour.
Divide the dough into 8 equal parts, shape into rounds, and flatten slightly. Let rise again for 30–40 minutes on a baking sheet lined with parchment paper.
Brush with egg, bake at 180 °C for 15–18 minutes until golden brown.
Cool completely on a wire rack so the internal structure stabilizes.


💡 Pro tip :

When shaping the buns, use tight surface tension: by pulling the dough ball towards you on the counter, you "seal" the bottom part, so it doesn't spread during baking, but rises high and remains perfectly round. You can achieve restaurant-quality texture after baking if, while still warm, you thinly brush them with melted butter – this makes the crust soft, shiny, and fragrant, just like in professional burger joints.
