An elongated, coarse-grained cut from the flank. Rich in flavor, full of character.

Preparation suggestion:
Marinate, then grill for 3 minutes per side. Slice against the grain!

Internal temperature:

  • Medium rare: 54–56 °C

  • Medium: 58–60 °C

Recommended sides/sauce:
Lime salad, grilled peppers, coriander yogurt.
